This class will teach you many of the fundamentals of French patisserie. You will learn how to make choux pastry, two different types of shortcrust pastry, a mirror glaze, mousses, and crème pâtissiére. 

You will take home various delicious tarts (see below for details of each), and choux pastry creations too.

This class is ideal for anybody new to patisserie, but ideally you will have a little baking experience. You don't need to be a pro, just a home cook is fine, but it's not aimed at complete beginners who have never picked up a wooden spoon before! As with all our classes, you can pay in instalments if you prefer, please contact us to arrange this.

During this class you will make:

  • Two different types of shortcrust pastry (Pâte Sablée and Pâte Sucrée a la Noisette)

  • Créme patissiére, a classic French pastry cream that has many uses

  • Mousses

  • Mirror Glaze

  • Choux pastry, which you will pipe in to choux buns

  • And more!

  At the end of the class you will take home:

  • Tarte Bourdaloue (French pear frangipane tart) 

  • Hazelnut, chocolate mousse & salted caramel tart with choux buns and a mirror glaze

  • Fruit tart with creme patisserie 

  • Velvet strawberry mousse & yuzu cremeux tart​

  • Choux buns (and éclairs if we have time)
