beginners masterclass

A four day masterclass that will equip you with a huge range of baking and decorating skills.

This class is aimed at complete beginners, or those who perhaps have some knowledge of cake decoration, but would like to expand their skills.  It is ideal for anybody looking to set up their own cake business, or those that just want to polish their home cake decorating skills.

This will be a super relaxed, no pressure class, which will cover all skills needed to create a stunning dessert table with tiered cake, cupcakes, and cookies.  

You'll be able to ask any questions you like during the class, and will take home your stunning creations to share with family and friends.  As with all of our classes, you can pay in instalments, please contact us to arrange this. In this class, you will cover:


Tiered Cakes


  • Baking two perfect vanilla sponges in different sizes

  • Scaling recipes up and down for different sized tins

  • Making American buttercream 

  • Making and working with chocolate ganache

  • Splitting, filling and levelling two tiers of cake

  • Crumbcoating using ganache 

  • Covering in sugarpaste and achieving sharp edges

  • Stacking and transporting tiered cakes

  • Colouring sugarpaste and using pearlised lustres 

  • Covering a board, trimming with ribbons etc


Sugar Flowers


  • Basic handmade sugar wired flowers 

  • Useful foliage fillers

  • Taping and arranging a small spray

  • Applying sugar flowers to your finished cakes




  • Baking the perfect vanilla cupcake

  • Making Swiss meringue buttercream

  • Piping cupcakes with buttercream swirls 

  • Making handmade roses and blossoms to decorate your cupcakes


Decorated Sugar Cookies


  • Baking perfect sugar cookies

  • Decorating with fondant 

  • Fondant marbling technique

  • Working with edible gold and silver leaf 

  • Using stamps to personalise your cookies
